Ingredients
6-12 miniature sweet, Red and Orange Bell Peppers*
Hummus**
1 12 oz. jar of Shea Gourmet Classic or Spicy Pickled Asparagus, cut into halves or thirds
*Miniature is key here because standard bell peppers would be too large to consume as an appetizer and would spill over onto the platter
**Homemade Hummus recipe below from a former roommate, Jane. If short on time, purchase ready-made Hummus from your local gourmet market or Trader Joe's
Directions
Rinse bell peppers; Cut and core the peppers so one end is open much like a tube
Stuff peppers individually with ~ 2 spoonfuls of Hummus
Insert Shea Gourmet Asparagus into center of pepper
Arrange stuffed peppers on a suitable platter for guests alternating colors to enhance the colorful appeal of peppers
Hummus
4 Cups (2.5 cans Chickpeas)--drained
1/2 Cup Tahini
1/3 Cup Warm Water
1/3 Cup Olive Oil
4+ Garlic Cloves
2-3 Lemons--juice of
1.5 Tsp Salt
2 Tsp Ground Cumin
Ground Black Pepper--to taste
Combine: Chickpeas, Tahini, warm water, olive oil and juice of 1 Lemon
Process in food processor
Add: Garlic, Salt, Cumin & Pepper; process again
Add more Lemon as necessary and desire
